Happy New Year! Enjoy These Black Eyed Pea Recipes Year Round

In honor of the new year, I decided to prepare some easy recipes that are freezable using black eyed peas. My hope was that they would bring "good luck" to all who enjoyed them. It turns out this little bean (no...it is not a pea) packs fiber and nutrients, such as magnesium, iron and folate. Since they were so tasty and my girls enjoyed them (and continue to request them a week later), I decided that, indeed, they have already brought good luck to our house. I intend to prepare these all year long, using other types of beans as well.
