Mediterranean Baked Chicken pictured with couscous and zucchini
There are many reasons I love this recipe:
- It is versatile. Make it with artichokes and feta cheese or layer the chicken over zucchini and mushrooms and top with Parmesan cheese.
- The balsamic vinaigrette is tasty on veges.
- It can be made ahead and frozen.
- Kids who like feta and try it on zucchini...will also like zucchini. (Not scientifically proven, but this is my experience.)
